Roasted Lemon Chicken

Time: 3 Hours • Serves: 4
Ingredients:
- 1/4 Cup Garlic Olive Oil
- 1/4 Cup Sicilian Lemon Balsamic Vinegar
- 4 Chicken Breasts
- 2 TBSP Dijon Mustard
- 2 TBSP Chopped Parsley
- Additional Flavor Recommendations: Italian Lemon Olive Oil, Tuscan Herb Olive Oil, Herbes De Provence Olive Oil
Directions:
- Whisk together all the ingredients and pour into a ziplock bag or casserole dish.
- Add chicken breasts to the marinade mix and allow to marinate for 2-3 hours or overnight in the refrigerator.
- Preheat grill or oven to 400°
- Salt & Pepper to taste.
- Grill chicken until completely cooked or bake in oven on a baking tray and drizzle with leftover marinage. Bake uncovered for 30 minutes until chicken is completely cooked.
