Bacon Lime Shrimp

Time: 30 Min • Serves: 2
Ingredients:
- 2 TBSP Chipotle Olive Oil
- Zest from 1 Lime
- 2 TBSP Lime Juice
- 12 Large Raw Shrimp, peeled & deveined
- 6 Strips of Bacon, cut in half (12 pieces)
Directions:
- In a small bowl combine the lime zest, lime juice & chipotle olive oil. Add the shrimp and toss until coated.
- Cook the bacon. Make sure bacon is not overcooked to but that it remains pliable.
- One at a time, wrap each half piece of bacon around each shrimp. Secure with toothpicks or thread or skewers. Place onto a baking pan, brush with remaining lime & chipotle mixture.
- Grill uncovered for 5 - 7 minutes on each side, or bake at 450° for 10 - 14 minutes until shrimp is pink & the bacon is crisp. Serve immediately.
