Bacon Lime Shrimp

Time: 30 Min • Serves: 2

Ingredients:


  • 2 TBSP Chipotle Olive Oil
  • Zest from 1 Lime
  • 2 TBSP Lime Juice
  • 12 Large Raw Shrimp, peeled & deveined
  • 6 Strips of Bacon, cut in half (12 pieces)

Directions:


  1. In a small bowl combine the lime zest, lime juice & chipotle olive oil. Add the shrimp and toss until coated.
  2. Cook the bacon. Make sure bacon is not overcooked to but that it remains pliable.
  3. One at a time, wrap each half piece of bacon around each shrimp. Secure with toothpicks or thread or skewers. Place onto a baking pan, brush with remaining lime & chipotle mixture.
  4. Grill uncovered for 5 - 7 minutes on each side, or bake at 450° for 10 - 14 minutes until shrimp is pink & the bacon is crisp. Serve immediately.
