    Sweet Potato Fries

    Ingredients:

    • 2 Medium Sweet Potatoes
    • 2 TBSP Gremolata Olive Oil
    • 1/4 Cup Italian Fig Balsamic Vinegar
    • 1 tsp Salt
    • 1/4 tsp Garlic Powder or Fresh Minced Garlic
    • 1/4 tsp Sweet Paprika
    • 8oz Feta or Blue Cheese Crumbles (optional)
    • 2 TBSP Chopped Walnuts (optional)
    • 1/2 tsp Black Pepper
    • Additional Flavor Recommendations: Family Reserve Olive Oil, Arbequina Olive Oil, Herbes De Provence Olive Oil, Harvest Apple Balsamic, Traditional 18 Year Balsamic, Lavender Balsamic

    Directions:

    1. Preheat oven to 400°. Line baking sheet with parchment paper.
    2. Thinly slice sweet potatoes into skinny fry-like slices.
    3. In a bowl, mix Gremolata Olive Oil, salt, garlic & sweet paprika together. Add the sweet potato fries and toss until well coated.
    4. Place fries on baking sheet and bake for 35 minutes until fries begin to crisp and turn golden brown.
    5. While fries are baking, place Italian Fig Balsamic in a small saucepan and bring to boil. Turn down to simmer and let the balsamic reduce by half until the balsamic is thick enough to coat the back of a spoon.
    6. Remove fries from oven and top with cheese and walnuts if desired. Drizzle the balsamic glaze over fries and serve immediately.
