Whisk the Cilantro & Red Onion olive oil and the Persian Lime olive oil together in a bowl.
Add the tomatoes, cooked corn and garlic to the olive oil mixture and stir well to coat.
Place the entire mixture into a baking dish and cover with foil. Bake at 375° until the tomatoes have collapsed (around 20 minutes). Remove from oven and set aside.
Coarsely mash avocados in a bowl into a chunky texture.
Add the cooked beans, salt & pepper to the avocado mixture and mix together.
Add the roasted tomatoes, corn & garlic mixture to the avocado mixture and stir together.
Heat tortillas and then add the mixture and wrap into burritos. Grill if desired.
NOTE: You can add ground beef or chicken if desired.
