Black Bean Dip

Ingredients:
- 2 TBSP Chipotle Olive Oil
- 1/2 Cup Green Onions, Sliced
- 2 tsp Coriander
- 2 tsp Cumin
- 2 (15 oz) Cans Black Beans, rinsed & drained
- 1/3 Cup Water
- 1/4 Cup Lime Juice
- 1 1/2 Cup (10 1/2 oz) canned chiles in adobo sauce
- 3/4 tsp Spicy salt
- 1/4 Cup Sour Cream
- 1/2 Cup Cilantro, minced
- Additional Flavor Recommendations: Chipotle Olive Oil, Garlic Olive Oil, Cayenne Argumato Olive Oil
Directions:
- Heat olive oil on medium heat. Add onions, coriander and cumin. Saute until soft (about 3 minutes).
- Add beans, 1/3 cup water and simmer for 7 minutes. Let cool for 5 minutes.
- Put beans & all remaining ingredients in a food processor or blender. Blend until smooth. Serve with chips, crackers, or vegetables.
