Black Bean Dip

Ingredients:

  • 2 TBSP Chipotle Olive Oil 
  • 1/2 Cup Green Onions, Sliced 
  • 2 tsp Coriander
  • 2 tsp Cumin
  • 2 (15 oz) Cans Black Beans, rinsed & drained
  • 1/3 Cup Water
  • 1/4 Cup Lime Juice
  • 1 1/2 Cup (10 1/2 oz) canned chiles in adobo sauce
  • 3/4 tsp Spicy salt
  • 1/4 Cup Sour Cream 
  • 1/2 Cup Cilantro, minced
  • Additional Flavor Recommendations: Chipotle Olive Oil, Garlic Olive Oil, Cayenne Argumato Olive Oil

Directions:

  1. Heat olive oil on medium heat. Add onions, coriander and cumin. Saute until soft (about 3 minutes). 
  2. Add beans, 1/3 cup water and simmer for 7 minutes. Let cool for 5 minutes. 
  3. Put beans & all remaining ingredients in a food processor or blender. Blend until smooth. Serve with chips, crackers, or vegetables.
