• 4 Medium to Large Sweet Potatoes
• 1/4 Cup Blood Orange Olive Oil
• 2 TBSP Bourbon Maple Balsamic Vinegar
• 1/2 Cup Maple Syrup
• 1 Garlic Clove, minced
• 1 tsp Salt
• 1/4 tsp Ground Black Pepper
1. Preheat oven to 400°.
2. Bake sweet potatoes in oven until soft and done (a fork should puncture potatoes easily).
3. Lower oven temperature to 350°.
4. Peel sweet potatoes and discard peel. Place sweet potatoes in a bowl.
5. Add olive oil, maple syrup, garlic, salt & pepper to sweet potatoes. Mash sweet potatoes.
6. Place mashed sweet potatoes in an ovenproof dish. Drizzle the top of the mashed sweet potatoes with the desired balsamic.
7. Place in oven and heat to desired temp (slightly warm to mostly hot). Anywhere from 10 to 20 minutes. Remove and top with pecans & enjoy.
