    Arugula Salad with Chocolate Orange Vinaigrette

    Time: 15 Minutes • Serves: 4


    Ingredients:


    • 12 oz Arugula, washed

    • 2 TBSP Chocolate Dark Balsamic (Seasonal) 

    • 2 TBSP Blood Orange Olive Oil

    • 1 TBSP Honey

    • 1 TBSP Shallot, minced

    • 1/4 Cup Candied Pecans

    • 1/8 tsp Salt

    • 1/8 tsp Pepper

    • Fruit if desired - Strawberries, Blueberries, Figs, Raisins, Craisins, or Pomegranate seeds.


    Directions:


    1.Whisk chocolate balsamic, blood orange olive oil, honey, and salt & pepper in a small bowl.  Set aside.

    2. Combine arugula, minced shallot, and candied pecans in a large bowl.

    3. Pour the chocolate orange vinaigrette over the arugula & pecan salad and toss. 

    3. Divide and enjoy.

    4. Add fruit of choice if desired 

    5. Season with extra salt & pepper if desired.
